Your progress is saved automatically upon collecting each hidden package so even if you die immediately after you won’t need to backtrack to recollect them.
In order to collect them, simply walk into them and you will pick it up. The majority are hard to find so you are unlikely find them all without the use of a Guide. Hidden packages are the only form of collectibles that you will need to collect for the 100% and in total there are 100 spread out across the game.
